We can now say that Philippine cuisine has finally made it into the American culinary mainstream following Filipino-American chef Tom Cunanan’s win at this year’s James Beard Awards. Olongapo-born Cunanan won the Best Chef–Mid-Atlantic title for his work at Bad Saint, a Washington DC restaurant that has played a major role in promoting Filipino food in North America, and was also named one of Bon Appetit’s Best New Restaurants back in 2016. This is the third time that Cunanan has been nominated for the award, but winning still came as a big surprise. “Never in my wildest dreams did I think I’d be up here,” he declared when he received the award during the ceremony held in May. • For his cosmopolitan spin on Philippine cuisine, Filipino-American chef TOM CUNANAN wins a James Beard Award
